Mussels! My Latest Healthy Protein Costco Find + a Simple Recipe to Enjoy
5 pounds of ‘organic’ mussels for $7.99? Start the car, am I right? 🥳
I saw these on my last monthly Costco trip and am so glad I picked these up even though I had never tried them before. ✔️
Adding variety and trying new things is a simple way to bring spice, a sense of adventure and aliveness to our days. - I see it as bringing a ‘travelling at home vibe’ . 🙌 I’m happy to have taken a chance on these - I switched the mussels out for the clams in my tasty dairy free clam chowder and loved savouring the warmth and yumminess on my deck this crisp Fall morning .
Here’s another simple recipe that - being a cilantro and lime (and now mussel!) lover - caught my eye and that I will be trying next. 🎈I LOVE the simplicity of cooking with mussels and find enjoyment too!

Cilantro-Lime Mussel Yum
Ingredients:
5 lbs (2.25 kg) fresh PEI Mussels
1/2 cup (125 mL) water
1 lime, quartered
1/2 cup (125 mL) tightly packed torn cilantro leaves, divided
1/2 cup (125 mL) regular coconut milk
1 to 2 Tbsp (15 to 30 mL) honey, to taste
Directions:
Rinse mussels. Tap any mussels that are still open and discard any that do not close after being tapped and rinsed. Set aside.
In a large pot, combine the water, the lime juice and rinds, and 1/4 cup of cilantro leaves. Bring to boil.
Add the mussels and cover with a lid. Turn the heat to high and cook until steam comes out from under the lid and the shells open, 6 to 8 minutes.
Remove from heat and let sit, covered, for about 1 minute. Discard lime rinds and any mussels that do not open.
Pour in the coconut milk, remaining 1/4 cup of cilantro and honey. Stir well and serve in individual serving bowls with the broth.
