Summer Recipe to Delight and Refresh: Healthy Homemade Dairy-free Fudgesicle
Homemade Dairy-Free Fudgesicles (thanks to Julie Zepp and Rawmanda for the inspiration! 👏
Ingrediwnts:
8 soaked medjool dates (pitted and soaked for half hour in 1/2 cup water)
3 avocados
1 cup non-dairy milk
1/4 cup raw honey
5 Tbsp raw cacao
2 tsp vanilla extract
Pinch of celtic salt
Topping Possibility:
½ cup Lily chocolate chips
2 tablespoons coconut oil
Cacao nibs, shredded coconut, hemp seeds
Instructions:
Soak dates in half cup water for 30 minutes
Add all ingredients to blender and mix it up! May need to add a bit more water or milk to get the mix nice and smooth.
Freeze overnight in popsicle molds (minimum 4 hours)
Remove popsicles (with warm water) and place on a parchment lined baking sheet —- put back in freezer.
Melt chocolate chips with 2 tablespoons of coconut oil (I recommend double boiler)
Dip fudgesicles in melted chocolate and place back on baking sheet adding sprinkles of whatever you fancy most!
