Summer Recipe to Delight and Refresh: Healthy Homemade Dairy-free Fudgesicle

Homemade Dairy-Free Fudgesicles (thanks to Julie Zepp and Rawmanda for the inspiration! 👏

Ingrediwnts:

  • 8 soaked medjool dates (pitted and soaked for half hour in 1/2 cup water)

  • 3 avocados

  • 1 cup non-dairy milk

  • 1/4 cup raw honey

  • 5 Tbsp raw cacao

  • 2 tsp vanilla extract

  • Pinch of celtic salt

Topping Possibility:

  • ½ cup Lily chocolate chips

  • 2 tablespoons coconut oil

  • Cacao nibs, shredded coconut, hemp seeds

Instructions:

  1. Soak dates in half cup water for 30 minutes

  2. Add all ingredients to blender and mix it up! May need to add a bit more water or milk to get the mix nice and smooth.

  3. Freeze overnight in popsicle molds (minimum 4 hours)

  4. Remove popsicles (with warm water) and place on a parchment lined baking sheet —- put back in freezer.

  5. Melt chocolate chips with 2 tablespoons of coconut oil (I recommend double boiler)

  6. Dip fudgesicles in melted chocolate and place back on baking sheet adding sprinkles of whatever you fancy most!

  7. Enjoy! ❤️
