Winter Recipe: Making Immune Boosting Gut Healing Broth in the Instant-Pot

Mandy Leblanc is a cherished friend and holistic nutritionist in Banff, Alberta who I seasonally do cooking workshops with. At our Winter Soup and Gluten-free Breads Class with Gut and Adrenal Health Focus we had to cook up her favourite Bone Broth recipe done with the Instant-Pot as it’s such a simple, tasty way to make up this nutritious food. Using the Instant-Pot decreases the cooking time by A LOT (!) i.e over 20 hours! … and avoids the smelling up of the house that happens with the longer stove top and crockpot methods.

This is the season to nourish our bodies and kidney Qi and to calm our minds with warm, grounding, nutritious dishes. This broth is an excellent base to make soups from, to cook grains in and to enjoy as a warm drink. (-:

Here’s the recipe!

Basic Broth: 

Bones from a roasted/cooked chicken (or turkey)

Chicken feet (optional for added collagen content)

1-2 Carrots

A few celery stalks

1 medium onion

2-3 cloves of garlic

1 tsp. Apple cider vinegar

Handful of herbs (thyme, rosemary, sage)

Extra boosters:

1 inch piece of ginger

1 inch piece of fresh turmeric

A few chunks of Chaga mushroom and/or Reishi

Cover all ingredients with water, fill to Max Fill line and cook in Instant-pot on manual or soup setting for 120 minutes.  Allow pressure to release.

Alternatively, simmer in a slow cooker for 12-24 hours.
